Ingredients (Serves 4-6): For the Pizza Dough

  • 3 cups all-purpose flour
  • 1/4 cup yellow cornmeal
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 cup warm water
  • 2 tsp sugar
  • 1/4 cup olive oil
  • 1 tsp salt

For the Pizza Filling:

  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 pound Italian sausage, cooked and crumbled
  • 1 green bell pepper, chopped
  • 1 small onion, chopped
  • 1 (14 oz) can crushed tomatoes
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Step 1: Prepare the Dough

  1. In a small bowl, combine warm water and sugar. Sprinkle the yeast over the water and let it sit for about 5 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the flour, cornmeal, and salt. Make a well in the center.
  3. Pour the yeast mixture and olive oil into the well. Stir until a dough forms.
  4. Knead the dough on a floured surface for about 5 minutes until it becomes smooth.
  5. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise for 1-1.5 hours, or until doubled in size.

Step 2: Prepare the Pizza Pan

  1. Grease a 9x2-inch round cake pan or a cast-iron skillet generously with olive oil.
  2. Press the dough evenly into the bottom and up the sides of the pan, creating a crust. Ensure there are no holes or thin spots.

Step 3: Layer the Cheese and Toppings

  1. Start with a layer of mozzarella cheese, followed by cooked Italian sausage, chopped green bell pepper, and chopped onion.
  2. Sprinkle half of the grated Parmesan cheese over the toppings.

Step 4: Prepare the Tomato Sauce

  1. In a mixing bowl, combine crushed tomatoes, dried oregano, garlic powder, salt, and pepper. Mix well.
  2. Spread the tomato sauce evenly over the pizza toppings.

Step 5: Add the Final Cheese Layer

  1. Sprinkle the remaining mozzarella cheese and grated Parmesan cheese over the sauce.

Step 6: Bake the Pizza

  1. Preheat your oven to 425°F (220°C).
  2. Place the pizza in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and the cheese is bubbling and slightly browned.

Step 7: Serve and Enjoy

  1. Allow the pizza to cool for a few minutes before slicing and serving.
  2. Enjoy your homemade Chicago-Style Deep-Dish Pizza!
